Have you ever partaken of this amazing tastiness? If not, I am here to preach the good news of the baleada to you. This is the most delicious tasty thing. The typical street bite of Honduras, it is also one of Jason's and my favorite things to base our meal around. Just get some flour tortillas, some frijoles fritos (refried beans), and some crema, and you're set. I just read online that some folks add a hard salty cheese, grated, or egg, or avocado... I'll have to try that.
I've tried many options for the mantequilla (cream) to go on top, and the closest thing I can find can be found at an Albertsons or grocery store that caters to the Latino crowd. Looks like this:

I'm a serious crema snob. I only ever find mexican crema and it is NOT the same. So this salvadorena crema looks promising. Do you make your own tortillas? I told you...I'm a snob. I agree that baleadas deserve a tribute. By george they are the best thing in the world.
Yum! I HAVE to go find that for Zack. We ate a bunch when we were down visiting... sooo good! But we've never been able to find the mantequilla to make it ourselves. Thanks for the tip to look at Albertsons!
we LOVE baleadas!! i've even started making our own refried black beans and corn tortillas. I've only ever had them with beans, eggs, and cojita cheese.... I'll have to try it some other ways. I had salvadorena crema for the first time when we were visiting marco's cousin in June and it was so much better than the mexican stuff.
mmmm....this will go over VERY well in my home I think! Do you think it'll be as yummy on corn tortillas? Jack is a snob and doesn't like flour tortillas. Well, he says he does if I make them. But I don't always like to make them, especially when I know he'll eat boughten corn ones!
So how is this crema different than sour cream? Sorry, I am an ignorant gringa...
So, the crema salvadoreña is a mite saltier and creamier than regular sour cream. Less sour. It's good with corn tortillas, too, yet way tastier with flour, in my opinion... I have only ever made my own twice, which was divine, because I used Hermana Erika's
Recipe, which has some sugar in it and makes em delicioso. Usually we just buy the dough tortillas that you have to cook up; they're close enough for the time-crunched DINKs that we are!
